• We only use wild fish, not farmed
• All our fish is sourced from sustainable fishing grounds
• All our fish are cooked in our family's own batter recipe
• Our chip shop chips are thicker than American fries and are a healthier product due to lower absorbancy of fat
• We use only fresh Maris Piper (or similar) potatoes prepared daily on site
• Our fishcakes are made on site using only cod, potato and fresh herbs giving a higher quality product than the alternative processed type
• Cheese savouries are also made on site using only good quality ingredients as an alternative to processed frozen savouries
• We use oil that is free from additives; low in trans-fats and contains no hydrogenated fat
• We fry at high temperatures, sealing the food in a instant, to keep the fresh flavour in and the fat out
• We continuously filter our oil

The history of Carlo's fish and chips is an interesting one. Like many Italians, Carlo emigrated from Italy to Scotland in search of success (well that and the quest for love). Laura (now Mrs Biagioni), herself from Scotland, had Italian roots also. It was during a visit to her Nonni, in the small Tuscan village of Castelvecchio, where she and Carlo met; and the romance began. They sped off into the Italian sunset on a 50cc moped, and the rest is history.

Carlo learned his trade from his new father-in-law, who had learnt it previously from his own father. Carlo's Fish and Chips was established in 1989 and this wonderful fish and chip shop, with beautiful restaurant, is still thriving in the busy centre of Alnwick.

The family is successfully in its fourth generation of fish friers. Carlo and Laura are now in partnership with their daughter, Sonia, and her husband Adam, keeping the wonderful family business alive for years to come. The family is at the heart of the business and adds to its spirit and atmosphere, so that it's not just delicious food you get, but a warm and friendly Carlo's welcome.

Carlo's was fully refurbished to a very high standard in 2009.
